Gambas Al Ajillo, is one of those dishes that I can eat by itself straight from the pan.. pair it with Zoodles (aka: zucchini noodles) and it’s a game changer. It’s usually served as a Spanish tapa straight from the stovetop in a cazuela. It means Shrimp with Oil. I am a sucker for anything made with garlic and red pepper and this dish has both. Zucchini noodles have been my go to as a low carb way to eat less pasta. You won’t think twice about it. Promise!
o 1 lb. Shrimp thawed and deveined
o Olive oil
o Red pepper flakes
o Red pepper
o Grated parmesan
First prepare your zucchini noodles by using either a spiralizer or just slicing them into thin strips with a peeler. Using a large pan, heat olive oil, once warm add in chopped garlic and the sliced red peppers and start sautéing. In a cazuala or pan sauté 3 cloves of chopped garlic or as much as your heart desires. Then add shrimp. Sauté about 3 mins on each side or until opaque. Add about 1 cup of white wine to the large pan and let simmer down. In the meantime steam the zucchini for about 3 minutes, careful not to overdue it or they will be too mushy. Add into the large pan with the peppers, white wine and garlic and toss together. Top it with a bit of parmesan. Serve the shrimp beside the Zoodles and enjoy!
A yummy and healthy dinner that I love to make, is this nutrient filled dish of oven roasted spaghetti squash, eggplant, and garlic, mixed with sautéed shrimp. On days that are a little hectic, and all I want to do is throw a meal into the oven and forget about it, this is one of my goto’s. Although my Italian roots are part to blame for my love of pasta, spaghetti squash is a great alternative. Instead I get an extra veggie that is rich in Omega 3 and Omega 6 fatty acids both vital to good health. Helping prevent heart disease and cancer it also aids in brain function. Eggplant is a great source of B1, B6, Potassium and dietary fiber. It’s deep purple skin is high is antioxidants, so much that it can be helpful in preventing and the progression of some cancers. It also helps manage type 2 Diabetes and lowers Cholesterol. Drizzled with a bit of olive oil and then roasted, the garlic in this recipe has many health benefits. Although raw and chopped garlic is even healthier. Garlic is known for is antibacterial benefits and blood cleansing properties. An aid to helping with Acne, it is also great for heart health as well as maintaining good cholesterol.

Bon A petit! I made this yummy salad for lunch today, that was actually to die for. I have been loving beets lately and had some leftover in the fridge, so I decided to whip this up. It’s beets, garlic and strawberries sautéed in a balsamic vinegar reduction. Tossed over a bed of romaine lettuce with a side of cottage cheese sprinkled with fresh pepper. Beets are super healthy and have many beneficial properties. They have extremely high levels of anti-carcinogens which means it is cancer preventative and rich in antioxidants and vitamins. It is also high in beta carotene which gives fruits and vegetables their red- orange pigment and means it is rich in Vitamins A and C. Beets also reduce cholesterol, lower blood pressure, prevent varicose veins, cleanse and builds your blood helping to carry 400% more oxygen to it. Also they are great for pregnant woman.
