A Delicious Dish!

Bon A petit! I made this yummy salad for lunch today, that was actually to die for. I have been loving beets lately and had some leftover in the fridge, so I decided to whip this up. It’s beets, garlic and strawberries sautéed in a balsamic vinegar reduction. Tossed over a bed of romaine lettuce with a side of cottage cheese sprinkled with fresh pepper. Beets are super healthy and have many beneficial properties. They have extremely high levels of anti-carcinogens which means it is cancer preventative and rich in antioxidants and vitamins. It is also high in beta carotene which gives fruits and vegetables their red- orange pigment and means it is rich in Vitamins A and C. Beets also reduce cholesterol, lower blood pressure, prevent varicose veins, cleanse and builds your blood helping to carry 400% more oxygen to it. Also they are great for pregnant woman. They are cancer preventing and are actually used to treat leukemia! Try this recipe, I’m sure you’ll love it as much as I did! Hit the jump to read on
